Fakesgiving

Last weekend, I was able to participate in a new tradition-- Fakesgiving.  As the name implies, its a Thanksgiving type meal held at a non-Thanksgiving time.  Everyone brought a dish and I chose to bring my new favorite dish: sweet potato soufflé.





Sweet Potato Soufflé

Boil 2 lb sweet potatoes until tender, cool, peel, and purée.  Its worth getting a food processor just for this recipe.

Add 1.5 c sugar, 2 eggs, 3/4 stick softened butter, 1 tsp nutmeg, 1 tsp cinnamon, 1 c milk.  I usually have a problem getting the butter to mix in, so I cut it up and throw it in the processor with the sweet potatoes for a couple seconds.

Pour into greased casserole dish. Bake uncovered 350 degrees, 35-40 minutes until set.

Sprinkle with topping: 1/2 c brown sugar, 3/4 c crushed corn flakes, 3/4 stick softened butter.

Bake 15 minutes longer.

Obviously, it was a hit.
